Well, my Whole30 journey went well. I lost 6 pounds in a month and found some great paleo recipes that we still use today! Our two favorites are for breakfast – waffles and pancakes! The waffle recipe is incredible – they are crisp on the outside and soft on the inside. The next day we toast them in a toaster oven for a few minutes and they crisp right back up. Throw some blueberries on top with some ghee (and maple syrup if you choose!) and you are set!
The other recipe is for paleo pancakes – another winner! These are made out of almond flour and are awesome when you use canned coconut milk (almond milk is great too!). These are super cool because you throw everything into a blender (we use a Vitamix) and then pour and go. I can tell you that we have A LOT of almond flour on hand at our house.
Since I finished Whole30, things turned up pretty quickly and we made a move to beautiful Colorado! The weather has been amazing and we are settling in nicely. Mountain biking, hiking, snowboarding, and other adventures await! Be sure to follow us as we check out the 14ers and lots of places to visit in Colorado and surrounding states.
